French bean soup may not be the first thing on your culinary list, but it is a surprisingly tasty soup! The soup is ever so easy to prepare and even better when served with some fried bacon.
Recipe for two
Time: 30 min.
Ingredients:
- 200 gr of French beans
- 1 onion
- 1 clove of garlic
- 500 ml of stock
- pinch of salt and pepper
- 2 teaspoons of thyme
- bacon (optional)
Preparation
Chop the onion and garlic. Cut the French beans. Pour some oil into a soup pot and fry the onion and garlic. After 2 to 3 minutes, add the French beans, salt and pepper, thyme and stock. Bring the soup to the boil and simmer for about 15 minutes. In the meantime, if you like, you can fry some bacon in a pan until crisp and serve it with the soup. After 15 minutes, you can mash the soup and serve with the crispy bacon.
